Guest and Giveaway: An Alternative Thanksgiving Meat

If you are like me, you hate doing things traditionally. like seriously, how many times can I really enjoy the same old turkey or ham? My secret: I have just about had it with Mr. Turkey and Mrs. Ham! During the month of November I have sought out Thanksgiving Menu Alternatives for the not so traditional folk that want to honor the holiday, but with a twist of excitement.

So this year I am trying something new and would love to share it with you in the event you would like to branch out or simply add this to your already confirmed Thanksgiving Day Menu:

Apricot Glazed Pork Tenderloin

I first found this recipe on Laura in the Kitchen, then I did what was needed to simplify it and it has been a hit ever since!

Ingredients:
• 1 1-½ lb piece of Pork Tenderloin
• 2 Golden Apples, halved
• ¼ cup of Apricot Preserves
• 1 ½ Tbsp of Balsamic Vinegar
• 1 Tbsp of Dijon Mustard
• Seasoning to taste ( I prefer the simple salt and pepper rub)


How to Prepare:

1) Preheat the oven to 425, line a 2 baking sheets with aluminum foil and set aside.

2) In a medium pot, add the apricot preserves, Dijon mustard, balsamic vinegar and season with salt and pepper. Should be cooked over medium heat until the mixture is runny.

3) Season your pork tenderloin with a subtle rub (salt and pepper recommended). Place it on the foil lined baking sheet.

4) Spread apricot mixture all over the pork tenderloin and pop it in the oven for about 35 to 40 minutes or until the internal temperature reaches 150 degrees.

5) In a small bowl, mix together the butter, and 1 Tbsp of balsamic vinegar.

6) For the Pork, after it’s had about 30 minutes of roasting (it should have another 10 minutes to go) pour over the remaining glaze and pop it back into the oven to finish cooking.

7) Remove pork from the oven and let it rest for 10 minutes before slicing.
