Simple Sweet Potato Pie



I love sweet potatoes, especially in the fall, and especially in PIE! I must admit, I also prefer quick and easy. So I found a great Sweet Potato Pie recipe I liked and tweaked it to my own. This melt in your mouth yumminess was so good, I'm taking one to the in-laws for Thanksgiving!

  • 1 (16oz) can of yams
  • 1/4 cup of butter or margarine (SOFTENED)
  • 1 (14oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 eggs
  • 1 pie crust
1. Mix the yams and SOFTENED butter until smooth. I didn't soften my butter (Since this was my first time of tweaking the recipe), and ended up with small 'butter pockets' in the final product. Fortunately it didn't effect the taste.

2. Add all the other ingredients (except the pie crust) and mix till smooth.

3. Spread the pie crust into greased pan.

4. Pour filling into pie crust (Make sure you don't have butter lumps like in my picture ;^_^ )

5. Bake at 350° in preheated over for 40 minutes, until golden brown.

6. Cool, serve, and garnish with cool whip!!

Fall Update 2015

Wait, Thanksgiving in less than a week away?!?! Ahhhhh!!! *hyperventilate* okay, I think I'm okay now.... This season has flown by too fast this year. I feel like we didn't get to do half our bucket list. I still have pumpkins that we never decorated for Halloween, so I'm going to do them for Thanksgiving I guess. (Or introduce Bubee to the art of pumpkin smashing... Okay, maybe not!) We have gotten a few things checked off though.

 Little Lady had her hayride to the pumpkin patch at school.

 She LOVES that Pumpkin so much!

Oh, what Fun!

Meme and I were also able to make it out to a UT game again this year!




This past weekend the kids and I saw some great Civil War history in Chattanooga, TN.




The sites were amazing and we had so much fun!!!

Upcycled Measuring Cup: "Grandma's Love is Immeasurable"


A few weeks back I posted an "Inspire Me!!" looking for inspiration for this worn our measuring cup. I've been trying to decide what to do for a while. Fortunately this month's Silhouette Challenge was a $5 and under project. I knew just what I wanted to do: An upcycle project.  You can probably do this with any unused glass container, but I think the measuring cup just makes this saying perfect!! :D Since this is an upcycle and I already had some scrap vinyl, I only had to buy the small jar of Armour Etch. (This tutorial assumes you already know basic Vinyl work.)

1. Cut THIS file, or your own design.

2. Transfer the vinyl to the glass.

3. Apply the etching cream per the instructions.

4. Rinse per the etching cream instructions.

5. Remove vinyl. I only removed the heart and left all the lettering. You can do any combination you like.

I like the abstract of the rough edges. It's hard to get a good picture of the whole container, but I think it turned out GREAT! We gave this back to my MIL and she loved it.
